The hula hoe is what we live by some times.... drag it through the ground and just cut off the top little layers of weeds, before they get huge and unruly.
Spinach .... wow you may think ... why so much? Well its all going to seed as we call it and once it goes to seed it looses flavor and is bitter.... so before the plant takes its self away from us all I figure lets have a spinach party. Some other ideas besides the Pesto.. How about Cream of spinach soup....or spinach Lasagna.
And Pea shoots.. what a sweet treat.. a seasonal delicacy.. you may think ... what is this? You can eat them by themselves...or in salads or lightly wilted in stirfrys or just as greens.
Notes from the Farm....
We call this time the tedder-todder-slim times...really its an exciting time, where the growing seasons over lap.
Still all the stuff on the table was planted out when we were still wearing white shirts and sun hats in 2009. And what we try to do is make all that 2009 stuff take us up until the stuff that was planted out in 2010 is ready. Early spring is the most difficult time of the year. At this time we really are at the mercy of the weather, of the rain and of the frosts.. its like a roller coaster... ahh I do love farming.. never dull ...
So this week has been full of weeding..tilling and more planting.. and starting peppers and tomatoes in the green house....
I will tell you all when we plant Potatoes via emai. We would like to invite your and your family and friends out to help us plant and get excited for those little gems of yum-yumm!

Spinach, Cabbage parsnips, kale, chard grape fruit, Sweet tender pea shoots, and parsley.
Spinach Pesto
- 4 cups washed, torn spinach leaves, stems removed,
- 3 garlic cloves,
- 3 tablespoons pine nuts or walnuts or almonds
- 1/4 cup olive oil
- 1/3 cup grated Parmesan cheese
- 1/8 tsp. Salt
Preparation: Place a few spinach leaves, garlic, pine nuts, basil and a little oil in blender or food processor container. Cover and puree until leaves begin to look crushed. Continue adding spinach leaves a few at a time with small amounts of oil to blender, using a rubber spatula to help to combine pureed mixture. Add Parmesan cheese and 1/8 tsp. salt. Cover and process until spinach pesto mixture is smooth.
- 1/3 cup grated Parmesan cheese
- 1/8 tsp. salt
